Cabernet Sauvignon

Year: 2020

Critic’s Rating:

AVA: Paso Robles

ABV%: 15.0

Tasting Notes: Appearance: Bright with a deep ruby core that lightens at the rim of the glass, with moderately thick, slow forming tears.

Aroma: Aromatic with ripe black cherry, red berries, and blackcurrant fruit with spice notes of vanilla and cinnamon, fresh sage, subtle dried rose petal, and toasted oak.

Palate: Nearly full-bodied with red plum, ripe bing cherry, and blackberry on entry with savory dried herbs, baking spice and toasted oak on the midpalate supported with balanced, fine tannins. The complex finish shows sustained ripe fruit and spice mixed with dried flower and camphor elements. The 2020 JUSTIN Cabernet Sauvignon is remarkably balanced and complex, with a fresh palate that invites another sip when enjoyed on its own, while also pairing well with a wide variety of dishes. Try this wine with grilled chicken or burgers at your next cook out, or with a prime ribeye at your favorite steakhouse.

Winemaker Notes: 2020 started with a dry, cool winter with a normal budbreak around the end of March. Spring temperatures fluctuated between cool and warm weather with flowering progressing well for all varieties. Our first hot weather came in late May, a few weeks earlier than expected, and fluctuations continued through late July when veraison occurred. Intense heat began in late July, becoming the warmest August and early September that we've seen in years, requiring intensive canopy management and the strategic use of shade cloth to protect our fruit. Temperatures moderated In September, allowing us to pick this normally early ripening variety while it showed full ripe fruit balanced with fresh structural elements.
