Tasting Notes: The nose is bright and fresh with hints of strawberry, Bing cherry, citrus blossom, ruby red grapefruit with flavors that carry over onto the palate along with a bright alluring minerality and smooth peach-filled finish that is refreshing and flawless in sophistication. Pair this wine with aged goat (Midnight Moon) or fresh feta cheeses to medium-bodied Spanish Manchego cheeses, shelfish, salmon, seafood tacos, roast pork, grilled vegetables, and pasta.

Winemaker Notes: The grapes were all picked separately with dedicated hand picks for optimal color and acidity. They were pressed while still cold to preserve the freshness and fruit intensity and with limited soaking time to acheive that soft peach, Provencal color. The wine was then cold-fermented in stainless steel with limited exposure to oxygen, retaining the subtle nuances of the bright fruit and high-tone esters. Malolactic fermentation was inhibited, further preserving these qualities.
